I would like to make a "message flow" diagram that shows an Outlook User, an Exchange server, and a Mail Gateway, and show each "step" that the message takes as it travels through the system, from the sender to the recipient.

I'm looking for suggested way to diagram this.

It's easy to draw the various servers/networks that are involved, but how to effectively communicate what is happening at each step?

Create one simple diagram on a page, duplicate the page for as many animation stages you need, then on each page highlight the appropriate shape in a suitable way. Then export the pages as images, these can be used standalone or imported into P/P or whatever.
