Tracing an irregular object

I want to create an outline of an irregular object. In this case, a grand piano. Sample link is below.

In Visio 2007, this used to be pretty easy. I'd just draw a rough outline using the line tool to get a closed shape. Then I'd go back and adjust the line, making then into arcs where needed. As I recall, all I had to do was select the outline and wait. After a few seconds, the midpoints would appear and I could make the adjustments. I could draw the midpoints to make arcs and I could skew them one way or the other. I think I could do all of that with the same tool (line tool, I think).

Now on 2010, it all seems to work differently. If I select any of the line tools (line, arc, freeform) and Ctrl-click on a line segment, an inflection point is created. If I use either anything but the pencil tool, that point can only be used to make straight lines. The pencil tool will make arcs, but I can't figure out how to skew them.

Is there a clear  tutorial on how to do this?

I want my 2007 back. :(

May be a bug or a kind of down grade.
I am using Visio 2013 in Window 8.1.
The arc can be skewed after changing height with pointing tool.
