I like to use the Server and Network shapes that Microsoft provided in the "IT Pro posters" stencils

http://www.microsoft.com/en-us/download/details.aspx?id=11616

The defaults provide a Blue, a Grey and a Blue with an Orange outline, but I would like to be able to edit the shapes and alter their colors.  Normally I just drag the shape to my Visio drawing and then right click it to select Group > Ungroup to begin editing it.  However, in this case, the shape just disappears and leaves me with nothing to edit.

Any ideas on how I can change the color of these shapes?

Ungrouping will almost always completely break a shape.
Use the Drawing Explorer window (on the Developer tab) to explore the contents of a shape.

I always tell my people to click on the last item in the edit menu. It says "edit group" or whatever master name the shape is implemented from.
If there are several grouping levels (see Paul's answer), then repeat the operation.
