I apologise if this is too simple a question, but I can not figure out how to set the default colour of the standard flowchart shapes, so that they always use the colours related to the branding my boss has requested.  It is in my head a simple task, but I cannot find a way to do it, so any help would be greatly appreciated.

If this can be extended into a theme so that the process, subprocess and decision shapes in existing drawings can be formatted the same, without changing them all manually, that would be awesome

TIA

This can be done with themes.  You may have to make your own.

In addition to, or instead of, make a custom stencil which contains the shapes you use, colored as you like them.  You might have multiple versions of the same shape, only the color (or other property) has been changed.

Once you have everything configured as desired, then, say the file as a template.  The template would be used to configure all new drawings to same standard.l
