No way! We can't change build-in list of line ends (aka arrow types).
Build-in list contain about 40 types (https://github.com/visioguy/VisioStyleResources), when custom end-of-line types are added in document, they are placed at the end of the list.
UPDATED We cant reorder items in this build-in list !!!
A kludge of a work around
In essence, use a some "line" shape to draw your drawing...when done, edit shape in document stencil to change line ends
This results that every line in the drawing that used this "line" shape has its line ends changed to new custom ends
Not pretty!!!
make a shape that is a line
place it in a stencil
pull it from stencil
make your drawing using this shape
When all done, go to document stencil
pick the shape and edit it
apply a custom line end to that shape in document stenci
save it to document stencil
Now all the lines int he drawing that use the shape have their line ends changed to the new lined.

you can create context menu for shape where you can select line ends. this idea is good for few specific custom line ends, not dozens !
you may have missed the trick.
If you do a drawing with 1,348 lines that need a custom end, then do use normal ends for 1,348 lines, then go to doc stencil and change the root shape one time and all 1,348 lines ends are changed
