I have added shape data field to the shape text box. I would like to have the option toggle show or hide without deleting the information from the Shape data.

You can set value in cell HideText (https://docs.microsoft.com/en-us/office/client-developer/visio/hidetext-cell-miscellaneous-section) to
TRUE for hide, of
FALSE to show
