I was experimenting with using timelines and found they weren't the solution I was looking for.
Now I'd like to remove the tab from the ribbon but can't figure out how. It does not appear anywhere in Visio Options / Customize Ribbon. I'm stumped. Do I need to edit the source XML to remove it?

Whenever you start a diagram using the timeline template you will get the TIMELINE entry on the ribbon. Start your diagram with a different template.
